The Ancient Town of Hoi An is bursting with interesting and delicious Vietnamese food; however for one reason or another much of this food remains anonymous and many visitors miss the opportunity to experience the unique local flavors of Hoi An. So lets’ become more familiar with the art of Vietnamese cooking with a start to finish cooking course. This tour combines a market tour, an overview of ingredients common in Vietnamese food, and a hands-on cooking class that ends with each participant making their own multi course meal. It is a great way to see all the nooks and crannies of a Vietnamese market and understand the secrets behind Vietnamese cooking. The class not only covers cooking techniques, but also herbal remedies, and tricks to using Vietnamese vegetable graters and knives.

Hoi An is especially known for three signature dishes, which are on every restaurant's menu. A Vietnamese/Chinese hybrid called "white rose," delicate steamed rice noodles filled with shrimp and topped with crispy shallots and bathed in fish sauce; "Cao lầu," sliced pork and local herbs on a bed of noodles reminiscent of Japanese soba; and crispy wantons filled with beef, pork, or shrimp, and topped with a tomato relish.  These dishes all combine regional Vietnamese ingredients with international flavors and remind visitors of the city's past as an international commercial hub.

The day starts with a comprehensive visit to a colorful local market where we met and chat with stall holders about their food. Your guide takes the time to have us touch, taste and smell all the various herbs we’ll be using. We also taste-test some exotic fruits that many of us have never even seen before, let alone taste. She also tells us about what types of herbs are best as cures: garlic or chives for colds, tumeric and honey every morning for good skin.

Then off to the market restaurant to see some demonstrations of all the food being prepared before commencing our cooking class. Overall you get to participate in creating 4 dishes: prawn cabbage roll soup; crispy pancake roll; grilled lemongrass chicken skewer and a green mango salad. The cooking class is easy to follow and everything is explained in great detail. The teacher has a few assistants on hand to help you through the process.
